I have been a type 2 diabetic for 20 years and have been told by all of the medical practitioners that I have dealt with that I am doing well. Having been a diabetic that long all I could expect was a steady decline. I never liked that answer and always thought there should be more that I could do to help the situation. I have tried every diet that came along and many crazy things that I thought up or heard about. (None of which worked for very long, if at all). I have always described myself and thought of myself as fat and getting fatter all the time. My health’s always been the most frustrating part of my life and the part where I felt I had the least control.

I have a family history of Diabetes and was diagnosed with Type 2 Diabetes a few years ago. Since then, I have been taking my medications regularly, exercising, and watching my diet and was able to manage my Diabetes and keep my blood test results within the acceptable range. It was not until I joined this program that I really saw a big improvement in those test results.

For a long period of time, my Hb A1C numbers were always in the range of 6.5 to 6.9, my Triglycerides in the range of 145 to 160, and my Total Cholesterol in the range of 145 to 155. At the end of the CHIP’s program, My Hb A1C dropped to 5.6, my Triglycerides dropped to 90, and the Total Cholesterol to 123. That was so amazing and encouraging.

I also lost 16 lbs. during the same period and that made me feel so good. The class was a truly eye-opener to me. I knew several bits and pieces of information prior to the class but the information from the class connected all the dots together in a way that now many things make a lot of sense and I feel much more confident with the food choices that I make every day.

After many months of focusing mainly on plant based food choices and staying away from meats and dairy products, I now enjoy more having the plant based meals. My Diabetes doctor sees me only twice a year now verses every 3 months before, he is very happy with my blood results and so am I.”

As a wife and Mom of 3, I always thought I was feeding my family healthy, well-balanced meals.  I also thought we were “active enough”.  Then I joined my husband at work for their Health Fair.  I feel like our life changed when we were introduced to Whitney’s Kitchen!  In a matter of months I felt more energized, I was sleeping better and that awful bloated-belly feeling that makes our pants a tad tight was gone!  I wasn’t looking to lose weight, I was just looking for healthier choices.  The best part is knowing I can still fill up my 6’3″ hubby and our growing children with these delicious meals!  Our most recent blood work numbers were fantastic and I have complete faith that they will be even better the next time.  Knowing that we were both born into families with long histories of heart disease, diabetes and cancer… Well, seeing our numbers go down and our quality of life go up makes us ecstatic!  It really is true ~ Health Happens at the Table!
