Springtime Barley Salad

Ingredients

3 c cooked barley

1 t curry powder

2 c frozen peas and carrots (defrosted but not cooked)

cherry tomatoes, sliced

2 T Tzatziki
 (From Whitney's Kitchen Recipe base)
fresh parsley

salt to taste


Directions:


Mix all ingredients in a large bowl. Add Tzatziki Sauce (Whitney’s Kitchen Recipe) to desired consistency. Season to taste.


Can be served refrigerated, room temperature or even hot (don’t cook too long or you’ll lose the vibrant coloring). Up the nutritional power and serve over a bed of lettuce. Use Tzatziki Sauce as an additional dressing
