Ria’s Breakfast Bombs

Serving Size: Makes 24 Cookies

After serving these incredibly rich, heavy and nutrient dense energy bites to our clients at ArrMaz, someone decided they should be called, Breakfast Bombs because of the energy they felt after eating these Nosh Nibs! So the name stuck! Enjoy making and eating these powerful little packages!

Ingredients

3 ripe bananas
½ cup shredded coconut
½ cup craisins (or raisins or dates)
1 cup grated carrots
1 apple grated (or diced finely)
8 oz can crushed pineapple drained
1 tsp vanilla
½ cup pumpkin seeds
½ cup sunflower seeds
¼ cup chia seeds
2 tsp baking powder
1 ½ cups flour (use your favorite flour ...I used coconut flour. Almond flour or ground oats would work well also
1 tablespoon cinnamon
1/8 c stevia (or pure maple syrup or agave nectar)
½ tsp salt

Directions:

Preheat oven to 350.

In a large bowl mash bananas and add coconut, craisins, carrots, apple, pineapple vanilla, craisins and seeds. (And liquid sweeteners if you have decided to use these instead of stevia).
In a small bowl mix baking powder, flour, stevia, cinnamon & salt.
Add to the large bowl and mix well. Mixture will be THICK! Let this mixture set for 5-10 minutes to allow the chia seeds to begin to absorb the liquid.

Using a 1 T scoop, over-fill a prepared mini muffin pan. (They won't rise much.) Bake 20 minutes or until desired doneness. Cool & enjoy!

Tip: Make extra to freeze. They can last for 6 months! (If no one knows they are there :)
