Pinto Sloppy Joes

Who doesn't love a drippy, messy, delicious sloppy Joe? Just wait until you taste our Whitney's Kitchen rendition! We've swapped the unhealthy ingredients for some stellar nutrient dense stand ins! Another family favorite in the making!

2 medium carrots, sliced
1 large white onion, sliced
4 cloves garlic, minced
1 large red bell pepper, diced

4c very thinly sliced green cabbage
1 medium zucchini, chopped
3T chili powder
2T balsamic vinegar
1 8-ounce can no-salt-added tomato sauce
1/2 c water
2T. reduced-sodium soy sauce or Bragg’s Amino Acids
2T tomato paste
2 T Dijon Mustard
2T brown sugar (sub stevia if sugar free)

3 c cooked pinto beans (or use 2 cans) salt to taste
8 whole-wheat hamburger buns


Saute all veggies in 1 T of water unil cooked through. 
Add the rest of the ingredients and heat through. 
Serve the mixture on buns or on a bed of mixed greens.
