Overnight Buckwheat Porridge

Serving Size: 4

This will make several servings and last in the fridge for a few days. Heat what you plan to eat and leave the rest chilled for tomorrow.

Ingredients

1 c buckwheat groats (uncooked)
1/4 c chia seeds
3 c unsweetened coconut milk
2 t vanilla
1/4 t cinnamon
stevia or agave nectar to taste

Directions:

1. Mix buckwheat groats, chia seeds, milk, water, vanilla extract, cinnamon, and salt in a bowl. Cover with plastic wrap and let it sit overnight in the fridge.
2. In the morning, either eat cold, or place a scoop or two in a small saucepan. Cook, stirring occasionally, for 7-8 minutes, until thick and creamy.
3. Add toppings and enjoy!
