This Hugh Jass salad can be packed into jars to make it the perfect "fast food". Beautiful on SO many levels!
1/4 c nutty cashew sauce
2 T red onion, thinly sliced
1/4 c brown rice
1/2 c black beans, rinsed and drained well
4 T diced avocado
4 T diced mango
2 c greens (spinach, kale, arugula, etc)
1. In individual containers place the ingredients in the order shown in the ingredient list. You can eat it now or at work the next day! Remember the avocado can discolor so be sure to pack it into the jar so air cannot come in.
