Nuts can be toasted or raw, but when pureed they turn into something completely different. Substitute any nut for this recipe and add a unique blend of spices to change the flavor for cuisine you are trying to mimic.
4 c water for soaking
2 c cashews
1 t garlic cloves
1/4 c water or vegetable stock, to puree
1/2 lemon or lime, juiced
1/2 t chili powder
salt and pepper to taste
1 T nutritional yeast, optional but awesome! for cheesy flavor)
1. In a large bowl place the cashews and enough water to cover the cashews for two hours or overnight.
2. Drain the cashews of the soaking liquid and place the nuts in a food processor, along with the garlic, 1 1/4 c liquid, lemon/lime juice, chili power and seasonings including the nutritional yeast if you want a cheesy flavor.
