Mexican Quinoa Salad with Orange Lime Dressing

Arguably everyone's favorite Hugh Jass Salad! Chock full of protein, fiber and creamy goodness. Be sure to make extra! It will last for several days in the fridge (store components separately)

Salad: Place all ingredients in a large bowl

5-6 c mixed greens
1 c cooked quinoa (red or white)
1 c frozen corn
1 c cooked black beans – save your bean liquid for the dressing. (seasoned with equal parts sea salt, cumin, chili and garlic powder)
1/4 c diced red onion
1 orange, segmented
1/2 ripe avocado, chopped
1/4 cup of fresh cilantro, chopped or torn

Dressing: Blend all ingredients until smooth
1/2 ripe avocado
1 large lime, juiced (~4T)
2T orange juice concentrate or 4T fresh orange juice
1-2t sweetener of choice (agave, maple syrup, honey)
1-2t hot sauce
1/4t cumin powder
1/8t chili powder
generous pinch of sea salt and black pepper
1T fresh minced cilantro
3-4T black bean liquid (from can or water)


Pour salad dressing on top of salad. Enjoy!
