Mediterranean Quinoa Salad

What a great way to serve a one dish meal chock full of a wide variety of colors and flavors! This dish makes a fabulous main or a side. Have omnivores sharing your table? Simply add a bit of grilled chicken or fish!

2 c cooked quinoa
2 c sliced grape tomatoes
1 c chopped spinach
1/2 c corn
1/2 c sliced kalamata olives
1 T kalamata olive juice (from the can or jar)
1 t minced garlic
1 t dry oregano
1/4 t salt
1/2 t black pepper


Mix all ingredients in a large bowl. Season to taste. Serve cold or room temperature.
