Kale and White Bean Soup

Frozen onion, celery and pepper mix....frozen carrots...canned or frozen white beans...fresh or frozen kale....seasonings anyone? Dinner Done!

2 c onion, celery and pepper mix or chopped onion
1 lb sliced carrots frozen
1T minced garlic
1 T dried oregano
1 T dried basil
1/4 t red pepper flakes (to taste)
2 cans white beans or (5 c cooked)
1 gallon vegetable broth
1/2 lb chopped kale or spinach (could be frozen)
salt and pepper to taste


Saute’ veggies and seasonings in small amount of water until soft. Add Beans and seasonings to pot. Bring to a boil . Add kale. Cover and cook until kale is tender. (5-10 minutes)

Salt and Pepper to taste.
