Serve this side with anything you love. This rice dish is great with some tofu tossed in it or served with a batch or tortilla chips!
3 c cooked brown rice
1 c or 1-15oz can black beans, rinsed and drained
1/2 bunch of cilantro, chopped
1/2 c frozen corn or 1 ear fresh corn
1 bell pepper, diced
1/2 red onion, diced
1/2 lime, juiced
1/2 c salsa, store bought brand
1 bag tortilla chips (optional)
whole grain burrito wrap (optional)
1.In a bowl combined all ingredients and add lime to taste.
INCREDIBLE on tortilla chips or wrapped in a whole grain wrap for surprisingly light and fresh burrito!
