Every essential ingredient can be found in either your pantry of freezer. You can even make a double batch of this deliciousness and freeze it for a future occasion!
This delicious dish is incredibly versatile! Consider wrapping a healthy portion of this in a whole whole grain tortilla with a slice or two of avocado. Or perhaps you'd like to add some broth and have a delicious and comforting South Western flavored Nosh pot!
1 lb frozen corn or Mexican blend frozen corn mix
1 can black beans, rinsed and drained
1 T cumin
1 t lemon or lime juice
16 oz prepared salsa
1 bunch fresh cilantro (optional)
Place all ingredients in a large bowl. Mix to combine. Season to taste and enjoy!
