Cinnamon-Coconut Wild Rice

Who knew wild rice could be a breakfast item, try this new twist on a tasty breakfast bowl.

2 c of cooked wild rice
8 slices of pineapple
1/2 t cinnamon
4 c coconut milk, divided
3 T chia seeds
1 t stevia


1. In a bowl mix 1 cup of coconut milk with 3 tablespoons of chia seeds and soak overnight.
2. The next day, portion out the wild rice between bowls and serve with more coconut milk, cinnamon, pineapple slices and enough stevia to your liking.
