Chick(un) Salad

Crowd Pleaser Alert! Try this versatile "salad" on any type of bread, wrap or crackers! My personal favorite is toasted Ezekiel Bread (freezer section). Switch out the bean...switch out the veggies...season it like your childhood favorite chicken salad or egg salad. You're going to be amazed.

Ingredients

1 can (1.5 c) chickpeas (garbanzo beans), drained and rinsed
1/2 c celery, diced
1/2 c carrots, diced
1/4 c green onions, sliced
1/4 c vegan mayo or hummus
salt and pepper to taste
dash of garlic powder
1/4 c sunflower seeds
any additional chopped veggies, dried fruit or herbs you have on hand,

Directions:

Place chickpeas in a food processor and chop until large pieces remain. (Alternatively you could put beans in a bowl and smash with a fork). Chop celery, carrots and green onions into large pieces and place in the food processor and chop until the same size as the chickpeas. Mix everything together in a medium sized bowl. Season to taste and enjoy on a whole grain bun, toasted Ezekiel bread, or "lettuce cup" made from swiss chard, collard greens, leaf lettuce or cabbage. Enjoy!
