Cashew Cookie Bars

A quick and simple family favorite. Perfect for a long run or bike ride. Whip some up and invite the kids or grandkids into the kitchen for some craft and snack time. Wonderful edible play dough!

1 c pitted Medjool dates
1/2 c raw unsalted cashews
1 T water – if needed


In a food processor, pulse the cashews and dates until they form a ball. (Add tiny bit of water if ball does not form within a minute). Remove the mixture and form into a ball. Press dough into parchment prepared 8×8 pan (spray lightly with cooking spray) Press flat. Or, divide dough and roll into 12 walnut sized balls. Enjoy! Makes fantastic edible play dough for the young ones or the young at heart!

Note: Store the bars in the refrigerator or freezer for maximum life.
