Simply substitute thick cut cabbage for your mother's chicken soup and you have another familiar, comforting go-to!
1 lb frozen sliced carrots
1 c onion/pepper/celery mix
1 T minced garlic
1 pound thick shred cabbage (These serve as your “noodles”)
1 gallon vegetable broth
3 T dried thyme
1 t rubbed sage
2 bay leaf
2 can garbanzo beans (5 c cooked)
1/4 c nutritional yeast (optional)
1/4 c chopped parsley
Saute’ veggies and seasonings in small amount of broth until soft. Add garbanzo beans and bring to boil. Reduce heat, cover and simmer for 30 minutes. Add nutritional yeast and stir through. Season to taste. Garnish with parsley as desired.
