Blueberry-licious Brown Rice Bake

You may think this breakfast item is a dessert until you read the ingredients. Brown rice and blueberries pair well in this warm baked breakfast, topped with a nutty crisp topping of coconut, flax and oats.

3 c cooked brown rice
1/2 c rolled oats
2 T ground flax
2 1/4 c almond milk
1/8 c agave syrup
1 1/2 t vanilla extract
1/4 c flaked coconut
1/2 t salt
2 c blueberries
1 T chia seeds

1 c blueberries
1 T ground flaxseeds
1/4 c rolled oats
1/4 c sliced almonds or chopped cashews
1/4 c flaked coconut
1 T chia seeds
1 T agave syrup


1. Preheat oven to 350°F. Spray an oven-safe baking dish. 
2. In a large mixing bowl add flax and almond milk, allow to sit for 10 minutes to thicken.
3. Add the cooked rice, vanilla, coconut flakes, salt, blueberries, and chia seeds. Mix well.
4. Sprinkle the remaining ingredients on top.
5. Bake for 40 minutes.

Tip: Consider topping with some low sugar blueberry jam or granola.
