Blueberry Compote

"Compote"! What a fancy name for a simple, 3 ingredient sauce that has infinite possibilities!

3 cups fresh or frozen blueberries
3 Tbsp orange juice concentrate
1 T ground chia seeds

1 t vanilla
1/4 tsp ground cinnamon
1/4 tsp Fresh or ground ginger

The sky's the limit! Make it your own.


Place fruit and juice concentrate in a medium saucepan. Bring to a boil. Reduce heat and simmer for about 15 minutes, until thickened. Mash fruit with your spoon as you stir.

Remove from heat and transfer to a container of your choice. Store in the fridge and reheat to serve with pancakes, waffles, french toast and oatmeal! Try it on N(ice) cream or chia pudding or more!
