Black-Eyed Pea Soup

5 cups Cooked Black-Eyed Peas
2 Garlic Cloves, Minced
2 Carrots, Peeled and Chopped
2 Celery Stalks, Chopped
1 Medium Onion, Diced
4 cups Tomatoes, Chopped
2 Bay Leaves
6 cups Vegetable Stock
4 cups Collard Greens, Chopped
Hot Sauce, optional


In a large pot over medium heat, cook onion, garlic, carrots, and celery in water until soft. Add remaining ingredients and bring to a boil. Cover a simmer for 20 minutes.
Remove lid and add collard greens and cook until tender.
