If you only think garbanzo beans when you think hummus... THINK AGAIN! This delicious snack is sure to be a crowd-pleaser!
2 c or 15 oz cooked black eyed peas (rinsed & drained if canned)
2 t nut butter (peanut, almond, sunflower)
2 cloves minced garlic (1 t)
1 t agave nectar
1 t smoked sweet paprika
1/2-1 tsp salt
2T lemon juice
1 T apple cider vinegar (to taste)
1/2 cup chopped flat leaf parsley
1 green onion chopped
Place all ingredients in a blender or food processor and mix until very smooth.
Salad Dressing: Transform hummus by thinning with small amounts of veg broth, vinegar or lemon juice. Season to taste.
