1 small onion, finely chopped
1 garlic clove, minced
1/2 t ground cumin
1 t coconut oil
1/2 t salt
1 bunch lacinato kale, stems removed and leaves cut in fine strips
1/2 cup cooked barley
1/2 cup cooked lentils
1/2 cup fresh basil leaves, cut in fine strips
1/2 cup fresh parsley leaves, chopped
1 lemon, zest and juice
1/4 c Hidden Cashew Ranch Dressing: See recipe at Whitneyskitchen.com
1/2 teaspoon sea salt
1/2 cup walnuts, chopped
salt and pepper, to taste
Saute' onion, garlic in a skillet over medium heat with 1 t of water until soft. Add cumin and heat through. Remove from heat.
In a large bowl, massage the kale with coconut oil and salt unXl kale begins to so^en. Add the barley, lentils, basil, and parsley. Stir to combine.
Add the lemon zest, lemon juice, 1/4 c dressing and salt to the cooled onion mixture.
Combine all ingredients. Taste and adjust for salt and pepper. Enjoy! Serves 4-6.
