Here's a perfect example of turning one of America's Favorite recipes into a HEALTHY alternative!
basil, 3 bunches
lemon juice 4T
pine nuts 2 T (These are EXPENSIVE!)
garlic, 3 cloves or 1.5 t minced
avocado, 1
garlic salt, 1/4 t or more to taste
water to desired consistency
1. Put basil, lemon, pine nuts, garlic and avocado into a food processor or blender and process until smooth
2. Season to taste with garlic salt and add water to your preferred consistency.
3. Refrigerate and enjoy!
This pesto will last for up to a week in the refrigerator and freezes beautifully for several months.
